In addition to being the Editorial Assistant for New Resources, Stacey has two additional positions. Stacey is a Research Dietitian for the National Soybean Research Laboratory at the University of Illinois at Urbana-Champaign, as well as a Community Culinary Nutrition Instructor for the University's Campus Recreation's healthy cooking classes. Stacey completed her dietetic internship and earned her Master of Science degree in Public Health Nutrition from the University of Tennessee at Knoxville. Her professional career has concentrated in the area of community nutrition program development, implementation and evaluation, with a primary focus in child health and education. All of this, however, is put into perspective by her job #1 as mom to two very active boys.
