Food Security and Nutrition.

      This resource aims to provide a comprehensive overview of food security and nutrition on a global scale for those interested in global food and nutrition issues. Chapters 1–3 of this book discussed leveraging nutrition for food security, a need for a transition toward a sustainable food system, food security and nutrition in agrofood sustainability transitions, and how those issues pertain to the 4 pillars of food security. Chapters 4 and 5 took a more economical approach, discussing the analysis of markets and their role in food security. Chapter 6 discussed amaranth and other climate-smart crops at length. Chapter 7 focused on metrics for measuring food security throughout the world. Chapter 8 focused on the advent and results of a food acquisition program in Brazil. Chapter 9 discussed case studies from Kenya to illustrate how wildlife conservation and food and nutrition security are interrelated. Chapter 10 discussed food waste in the context of its impact on food security. Finally, Chapter 11 discussed new technology and how this might impact food security in the future. In addition, Chapter 11 discussed why fatty acids are important in the diet and their role in the prevention of noncommunicable diseases.
