Food Waste Recovery: Processing Technologies, Industrial Techniques, and Applications

      Food waste research has emerged as an interest in many different disciplines in the last few years. With interest from fields such as environmental policy, school nutrition, food science, and package engineering, solutions to reducing food waste have had a vast scope. An interdisciplinary approach to reducing food waste is necessary to meet the global and national goals of reducing food waste by 50% by 2030. Food Waste Recovery ventures to aggregate the latest research and technology in food science to extract valued components from food waste across the food chain. The goal of the book is to support scientists in the development of industrial and commercialized food waste recovery applications.
